Ingredients

  • 20 large white mushrooms, stemmed
  • 1/2 cup Italian-style dried breadcrumbs
  • 1/2 cup grated parmesan or Ramono cheese
  • 2 cloves garlic, peeled and minced
  • 2 teaspoons Italian seasoning
  • 1/3 cup olive oil
  • Salt and Pepper
  • Chopped parsley for topping or green onion
  • *You can add mild or hot Italian sausage to spice it up. Cook 1lb and add to mixture*

Instructions

  1. Preheat oven to 400'F
  2. In a bowl, mix together breadcrumbs, cheese, garlic, Italian seasoning, salt and pepper to taste, and 2 tablespoons of olive oil.
  3. Add foil to a large baking sheet and drizzle with olive oil to coat. You do not have to use foil, just makes it easier for cleanup. Spoon the filling in the mushroom cavities and arrange on a baking sheet, cavity side up. Drizzle remaining oil over the filled mushrooms and bake until tender and the filling is golden brown on top. About 25 minutes.
  4. Sprinkle with chopped green onion or parsley
