  • 1 cup (240g) active sourdough starter (fed and bubbly)
  • 1/2 cup (100g) granulated sugar and 1/2 cup (100g) brown sugar
  • 1 cup (240ml) buttermilk (or regular milk mixed with 1 tablespoon lemon juice or vinegar)
  • 1/2 cup (120ml) vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cup (250g) all-purpose flour
  • 1 cup (90g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (240ml) boiling water

Instructions

Step 1: Prepare the Oven and Pan

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Cake Pan: Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2: Mix Wet Ingredients

  1. Mix Wet Ingredients: In a large mixing bowl, combine the active sourdough starter, sugar, buttermilk, vegetable oil, eggs, and vanilla extract. Mix well until smooth.

Step 3: Combine Dry Ingredients

  1. Sift Dry Ingredients: In another bowl, sift together the all-purpose flour, cocoa powder, baking soda, baking powder, and salt.

Step 4: Combine and Add Water
