Toffee & Chocolate Chip Cookies with Brown Butter

Ingredients
- 1 cup of unsalted butter
- 1 cup of dark brown sugar (you can use light if it's all you have)
- 1/2 cup granulated sugar
- 2 large eggs at room temperature
- 2 teaspoons pure vanilla extract (you can use imitation)
- 2.5 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt (a little extra flaky salt if you have to add on top)
- 1 cup mini chocolate chips
- 1 cup Heath bar toffee chunks
Instructions
- Preheat oven to 350'F
- Browning the butter: Set the pan to medium heat and add the butter. Cook for 5-7 minutes stirring constantly. It will begin to foam up and darken giving way to a nutty aroma. Its ok if there are little bits forming, it will add flavor to the cookies. Add to KitchenAid mixer (or mixing bowl) and let cool for ONLY 5 minutes. You do not want the butter to thicken.
- Whisk in both sugars.
- Whisk in eggs and vanilla extract.
- In another bowl, add flour, baking soda, and salt-stir together. If I am being honest, I add all of these to the mixer. I don't want to dirty another bowl. They come out great. Just make sure you sprinkle baking soda around and not dump in one area. Turn on the mixer and let the ingredients mix.
- Fold in the chocolate chips and toffee. Again, I sprinkle in and turn on the mixer on low.
- Using a tablespoon, scoop into balls onto baking sheet (heaping tablespoon size). Make sure you spray your pan with cooking spray. Personally, I LOVE LOVE LOVE the cookie silocone baking mats! The best part of this recipe is the brown butter. It takes the cookies to the next level! Depending on if you use light or dark brown sugar and also how long you brown your butter will determine the color of your cookies. For mine. I used dark brown sugar and browned my butter to almost a cocoa color.
